Capturing email subject lines

Hello all,

Just wondering if anyone has come across a util or has a way of parsing
out the subject lines from incoming emails (via the logs or tcpdump or
something else) and redirecting them to a file for use later in
anti-spam measures. Would be extremely helpful to be able to filter
these results based on the email recipient.
