Postfix has some major advantages, the biggest being regex-based
header and body checks. I only use sendmail for some older systems
(legacy stuff) and systems where I'm too lazy to change the default
(because they never handle mail :).
I'm using the following setup, mostly because it requires almost no
non-Core components on a Fedora box:
* Postfix + amavisd-new (+ clamd + spamassassin) for incoming mail
(delivering to Maildir)
* Dovecot (configured for Maildir) for IMAP and/or POP3
* Squirrelmail for webmail
Courier-IMAP works nicely also (it supports POP3). Lots of people
seem to like Cyrus also, but it seems a bit heavy for my tastes.
If you want to set all this up, let me know... I started writing up a
howto document a while back, but I never quite finished it...
