IIRC, Linux uses the reserved space to defrag the filesystem on the 
fly.  But I cannot find anything via google to support that claim.

Personally, I like have 5-10% reserved.  That way, when I get close to 
99% full, I know I can quickly free up 5% on the fly and then go get a 
new drive or expand the Logical Volume.  It's a nice soft limit before 
hitting the hard limit.
