making an RPM

I was hoping that "building rpms" thread was about making your own
rpms, but since it wasn't ...

I can't seem to hit upon the right search terms to point me to a
place that explains how you package your own software into an rpm. 
Like, if you have a large java app, with a big directory structure
that you want to distribute as an rpm - How would you package it up
so that a user could simply type "rpm -i myjavaapp.rpm" to install it?
