What exactly do you mean? Do you mean switching hosts from using one DNS server to another? If so, then I'd reccomend that the hosts all be configured to get their DNS server from DHCP. Then, set up your new DNS server. Then modify DHCP to give out the new DNS server's address. Check to make sure the dhcp-lease time is reasonable. Finally, after all dhcp leases should have expired, check the logs on the old dns server and see which hosts are still querrying it. Then, go fix those hosts to point to the new DNS server. Finally, take the old dns server offline.
