simple mail server

How does one setup a simple mail server?

I would like to get a simple mail server running. However, I'm not
clear on how to do this. Most of the howtos seem to be written in
excruciating detail for some large datacenter or business and include
all kinds of bells and whistles with IMAP, POP3, a web interface,
virtual domains, etc. (
http://www.linuxdevcenter.com/topics/linux/email ,
http://www.tldp.org/HOWTO/HOWTO-INDEX/howtos.html ) All I would like
is a simple mail server for my home. The network layout looks
something like this:

                                                      +- [laptop 1]
{Net}--[cable modem]--[wireless NAT/router/firewall]-|- [server
(192.168.0.101)]
                                                      +- [laptop 2]

The router's IP is DHCP on the WAN side and 192.168.0.1 on the LAN
side. Also the router is a also a DHCP server for the LAN side. For
now all I want is for the server to accept outgoing mail from laptop 1
and laptop 2, and send it on to the appropriate destinations. My plan
so far is to install Debian (Libranet 2.8.1) on the server and install
webmin and postfix.

What are your thoughts? Any pointers to some well-written, simple docs
or tutorials are greatly appreciated.
