The links in the section on using Apt preferences is what you're looking for.
It's apt, so it will apply, whether it is Xandros, Debian, or RedHat using apt4rpm.
In short, you'll need to setup your apt preferences file.
If you're into RTFM, you can always issue a 'man apt_preferences' from the CLI.
