you could run an SMNP daemon on the server and use MRTG to grab the info from 
the ethernet card. you could also run MRTG on a switch off of the router or 
on the router itself.

I use MRTG on our Cisco Switch, Cisco 7400 & on our redback SMS 500, not to 
mention a couple of our servers.

If you use something to just "Grab" the traffic right from the ether you might 
run into wasting more bandwidth than you monitor.
